This week's show focuses on this spring holiday by demonstrating how to make it fun, smart, and simple.

Bill Niman of Niman Ranch talks about raising animals for the Easter table with care and compassion. Find out the what's, how's, and why's of sheep and hog breeds, family farming, and changing the way Americans buy their meat.

Let's talk lamb. IMHO, there is no easier and more sophisticated Easter meal than a leg of lamb with perfectly roasted vegetables.

Spring is a time for cute baby animals of all kinds and Shane Rhodes has just acquired his very first chicks. He let's us in on the secret life of fowl and offers a great idea for what to do with the eggs.

Tim Elliott, our Guest Oenophile and the host of the wine podcast, Winecast, offers his suggestions for wines to pair with Easter lamb:

  • German Riesling, particularly a Spatlese like the Schloss Vollrads 2001

  • Chenin Blanc, particularly dry Vouvray from France's Loire region

  • Tempranillo-based wines from Spain, like those from the Navarra and Rioja regions. Esp. Bodegas Javier Asensio, Torsa Tinto 2003 or Marques de Riscal Rioja Reserva.

  • Grenache-based wines from France's Rhone region such as Chateauneuf-du-Pape

Find out more about Torsa Tinto and Riesling on Tim's previous shows.
