The great thing about this drink is that you can adjust it to fit your budget. If you want to splurge and are only serving a few cocktails, use your favorite Champagne and a choice Creme de Cassis, such as Marie Brizard or Mathilde. For a tighter budget or a larger crowd, you can make elegant cocktails using a sparkling wine such as Cava or Proseco and a less expensive Cassis, such as DeKuyper.

Pour Champagne or sparling wine into flutes. Add a splash of Creme de Cassis to suit your taste and color. If you prefer to measure, try 5 parts wine to 1 part Cassis.

Note: Creme de Cassis is blackcurrant liqueur that gives the drink a beautiful red hue for Valentine's Day.
